Description
A whole beef brisket rubbed with smoky chipotle spices and slow-smoked until tender.
Ingredients
10–12 lbs whole beef brisket
3 tbsp kosher salt
2 tbsp black pepper
1 tbsp smoked paprika
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 cup chipotle peppers in adobo sauce, blended into a paste
Wood chips or chunks (hickory, mesquite, cherry, or applewood)
Instructions
Trim excess fat from the brisket, leaving about ¼ inch of fat on the surface.
Combine the salt, pepper, smoked paprika, cumin, garlic powder, and onion powder. Rub the mixture generously over the brisket, then massage in the chipotle paste to cover every inch.
Wrap the brisket and marinate in the fridge for at least 12 hours (overnight works best).
Preheat your smoker to 225°F. Soak wood chips in water for 30 minutes, then add them for smoke.
Place the brisket fat side up on the smoker grate. Smoke for 1 to 1.5 hours per pound (roughly 10-15 hours for a 10-lb brisket), adding wood chips every 45-60 minutes.
Monitor with a meat thermometer: the brisket is done when it reaches an internal temperature of 203°F.
