A plate of tender, sliced barbecue beef short ribs glazed with a rich, smoky sauce, served on a white dish.

Oven-Braised Boneless Beef Short Ribs

  • Total Time: 3 hours

Description

Tender, fall-apart boneless beef short ribs, seared and slow-braised in the oven.

Ingredients

Boneless beef short ribs

Onion, garlic, and celery (aromatics)

Salt, pepper, thyme, and rosemary

Braising liquid: beef stock, red wine, or beer

Optional: carrots, mushrooms, or pearl onions

Oil with a high smoke point (e.g. canola or grapeseed)

Instructions

Trim excess fat from the ribs and season generously with salt and pepper.

Heat a large skillet or Dutch oven over medium-high heat with a small amount of oil. Sear the ribs for 2-3 minutes per side until a golden crust forms, working in batches to avoid overcrowding.

Deglaze the pan with your chosen braising liquid, scraping up the browned bits. Add aromatics (onion, garlic, celery, herbs) so the liquid covers about two-thirds of the ribs.

Preheat the oven to 325°F (162°C).

Return the ribs to the pot, cover, and transfer to the oven. Cook for 2.5-3 hours, checking periodically that the liquid hasn’t evaporated, until the meat is fork-tender.
