Traditional Moroccan couscous served with lamb and vegetables.

Couscous Marocain

  • Total Time: 45 minutes

Description

Traditional Moroccan steamed couscous with a spiced vegetable and meat stew.

Ingredients

Medium-grain semolina (traditional couscous)

Salted water, for sprinkling

Onions

Turmeric, ginger, cinnamon, or Ras el Hanout

Carrots, zucchini, turnips, and chickpeas

Preserved lemon

Lamb or chicken (or a vegetarian mix of chickpeas and squash)

Tomato paste

Instructions

Place the semolina in a steamer and steam for 15 minutes.

Transfer to a bowl, sprinkle with salted water, and fluff with your fingers or a fork.

Repeat the steaming and fluffing two more times, for three rounds total, to fully separate the grains.

While the semolina steams, sauté onions in a separate pot, then add the spices, tomato paste, and your protein of choice. Let it simmer until the flavors combine into a rich stew.

Add firm vegetables like carrots first, then softer ones like zucchini later, so everything finishes cooking at the same time.

Serve the steamed couscous topped with the stew and vegetables.
