1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 2-inch cubes

1 cup plain yogurt (full-fat preferred)

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons tomato paste

3 tablespoons olive oil

68 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon ground cumin

1/2 teaspoon white pepper (or black pepper)

1 teaspoon salt

Instructions

1. Prepare the Marinade:

In a large mixing bowl, whisk together the yogurt, lemon juice, tomato paste, olive oil, garlic, and spices until smooth and well combined.

2. Marinate the Chicken:

Add the chicken pieces to the bowl and coat thoroughly with the marinade. Cover and refrigerate for at least 4 hours—overnight is best for full flavor.

3. Skewer the Chicken:

If using wooden skewers, soak them in water for 20–30 minutes to prevent burning. Thread marinated chicken onto skewers, leaving small spaces between each piece.

4. Preheat the Grill (or Oven):

For grilling: Preheat to medium-high and lightly oil the grates.

For baking: Preheat your oven to 450°F (230°C) and line a baking sheet with foil.

5. Cook the Chicken:

Grill: Cook the skewers for 10–12 minutes, turning every 2–3 minutes until charred and cooked through.

Oven: Bake for 20–25 minutes, flipping halfway through. Broil for the last 2 minutes to get some color.

6. Serve Hot:

Remove from heat and let rest for a couple of minutes. Serve with garlic sauce, warm bread, and your favorite sides.

Yogurt Tip: Full-fat yogurt gives the richest flavor and best tenderizing effect.
