Dry Ingredients:
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder

- ½ cup brown sugar
- ½ teaspoon baking powder

Wet Ingredients:
- ½ cup vegetable oil (or melted coconut oil)
- 2 eggs (or flax eggs for a vegan option)
- 1 teaspoon vanilla extract
- ¼ cup dairy-free milk (almond, oat, or soy)
Mix-ins:
- ½ cup dairy-free chocolate chips
- 10–12 Oreo cookies, crushed
Instructions
Step 1: Prepare the Baking Pan
- Preheat the oven to 350°F (175°C).
- Line an 8×8-inch baking pan with parchment paper or grease it lightly.
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, salt, granulated sugar, and brown sugar.
Step 3: Combine the Wet Ingredients
- In a separate bowl, whisk together the oil, eggs (or flax eggs), vanilla extract, and dairy-free milk until well combined.
Step 4: Create the Batter
- Gradually mix the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing to keep the brownies fudgy.
Step 5: Add Oreos & Chocolate Chips
- Gently fold in the crushed Oreos and dairy-free chocolate chips.
- Pour the batter into the prepared baking pan and spread evenly.
Step 6: Bake the Brownies
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Step 7: Cooling & Serving
- Let the brownies cool in the pan for at least 15 minutes before transferring them to a wire rack.
- Slice into squares and enjoy!
Notes
- For vegan brownies, use flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water = 1 egg).
- To make gluten-free Oreo brownies, use a 1:1 gluten-free flour blend and gluten-free Oreos.
- Brownies will firm up as they cool, so don’t overbake them!
- Store in an airtight container for up to 4 days at room temperature or freeze for up to 3 months.
